Day 29

As you read this it is currently Day 30 for me. I got home from class late last night and so this post is A little late I’m sorry!

Sleep: Like a rock what else is new. I can’t even believe how deep I sleep now. Its really awesome!

Run 6:30am:

My sister is trying to get back into running so I have been getting up and meeting her at 6:30 to get a 3 miles run in. I love it, gets a run in for me before my day starts! We do a route for now that is almost 100% flat so she can get back into the swing of things.

CJ was home today so after our run I wanted to make something yummy for breakfast. I cooked up some slices of nitrate free, uncured bacon. and then attempted my first ever omelet! lol I always get frustrated when I attempt to make them and end up just having an egg scramble instead. But these actually didn’t come out too bad!! I sautéed on the side some broccoli, spinach, peppers and tomatoes before adding them into the eggs!

WOD:

We headed into Crossfit around 11 to get a work out in.

Skill: Rope Climb…ugh my hands kill!

Lunch 12:30pm

Me and CJ had a lot of errands to run today and we were starving so lunch was on the go. We stopped in at Panera and I ordered their new avocado Cobb Salad. with no cheese, and only lemons for dressing. It was actually very good. It had bacon, avocado, hardboiled eggs and chicken in it. On the side I got a fruit cup and an ice tea.

I’m back in school so I had a class tonight that goes 6:30-9. This will be the last time I don’t eat beforehand but today I wasn’t very hungry so I made a shake of Frozen strawberries, ice,spinach, and almond milk.

I packed a snack just incase the shake didn’t hold me over and I’m glad I did because my stomach started growling in class.

I had full intention of cooking up some chicken when I got home but by the time I did, I was tired and sore. I ended up just throwing together a 2 ingredient pancake with some almond butter and coconut flakes. BTW! I added two eggs this time and look at how beautiful it came out!!!

Sleep: I fell asleep as soon as my head hit the pillow last night I was up early to help out at the box this morning. I was pretty sleepy but had full intention of taking a nap when I got back. I got up at 4:30am and headed to the box and was home by 6:45 so I crawled into my bed and hung out there for about 2 hours.

After sleeping for about 2 more hours when I got home I got up and made a yummy egg scramble with yellow peppers, tomatoes, egg whites and ham. With a coffee with coconut milk on the side.

I really enjoyed yesterday’s lunch so I repeated it again today. Some left over turkey with cucumbers with salt and pepper and some apple slices on the side. This is a really random lunch but really yummy!

Before heading to crossfit today I snacked on a white peach. I love these peaches they are so juicy!

Crossfit:

To say I was excited to go into crossfit today would be an understatement!! Our new Evolution Rig was finished and we had pullups on the board!! I could not wait!!

Skill/Strength-5×2 and 1×1 Thrusters I used it as a skill to work my tight hips and shoulders a bit. I got up to 85#

These are CJ’s favorite chicken fingers that I made a few weeks back. They are coated in coconut flour and coconut flakes and then I pan fry them in coconut oil before putting them in the oven for a bit. On the side roasted broccoli and cauliflower and a little sweet potato. It was delicious!!

Time for bed for me, I have to be up really early to run with my sister!! Good Night everyone!

Day 27

I’m alive! and still going strong! I decided to take this weekend off of blogging because I needed some family time and I didn’t want to be concerned with taking pictures and coming home to blog. Saturday I spent the day at Country music fest and Sunday was all about enjoying my niece’s last Sunday at home before she goes to college.

But I’m back, its Monday and only 3 days left of my challenge!!

Sleep: I slept pretty great all weekend, and last night as well. I use to have a hard time getting up on my own at a decent time but my body seems to be in a routine now and goes to bed and wakes up around the same time every day.

I made one of Tina’s two ingredient pancakes for breakfast. On the side I had 1 hardboiled egg for some extra protein and a tea.

Before heading out for the day I had a white peach and some walnuts. This snack just never gets old its so yummy and the peach was perfect!

I spent the afternoon at the box waiting with Todd for out new pull up rig to show up. I packed a few things to eat because I knew I’d be there for hours. For lunch I broke into some leftover turkey from Sunday dinner and some cucumbers that I sprinkled with salt and pepper. For some weird reason I really enjoyed this lol. I hadn’t had turkey in a long time so I really enjoyed it last night and again for lunch.

**Unpictured was quite a few handfuls of almonds that I snacked on while waiting around at the box.

Run:

My sister Melissa and I went down to Dracut to meet my sister Becci for a run tonight. She is trying to get back into running shape so I’ll be meeting her a few days a week to hit the pavement. Today we hit about 3 miles.

By the time I got home tonight I was starving! I through together some chicken and veggies with some random seasonings. It wasn’t the most creative dinner but I was way too hungry to care!

Sorry this post is late. I got hit with a serious cold last night and felt like absolute crap so blogging took a back seat to some rest.

This cold has really knocked me on my butt. I feel like my head is underwater and my ears and nose are completely blocked…all and all its loads of fun! lol

I really had to force myself to eat lunch again today. Of course I went with left over Coconut Chicken Curry and it was even better the second day!!

The cold really hit me hard around dinner time so I had zero interest in cooking. So CJ brought home La Caretta take out and I went with my usual Polo Sinaola. So So good!!

Coconut Chicken Curry

You all need to add this to your recipe books asap! The only thing I will change next time I make it is to add in some more heat because this was not spicy enough for me. But those of  you who want to try curry but are concerned you might not like it, make this one!

Ingredients

  • 1lb of Chicken-Diced
  • 1 tbsp Olive Oil
  • 1 Onion Chopped
  • 2 garlic cloves minced
  • 1 tsp ginger minced (I used ground ginger)
  • 1/2 tsp tumeric
  • 1/2 tbsp red curry paste
  • 1/2 tbsp curry powder
  • 1 can coconut milk
  • 1 Zucchini Chopped
  • Salt and Pepper
  • ***(the pictured coconut milk is NOT whole30 make sure you get a can of Coconut milk)**

In a large sauce pan, brown the chicken until fully cooked

In a separate pan sauté the onions, garlic, and ginger until onions are fully cooked

Add onions to chicken along with curry paste, curry powder, turmeric, zucchini, and coconut milk. Combine it all together and bring it back to a boil and cover and simmer for 15 minutes.

Serve over cauliflower rice, or zucchini noodles, or just on it’s own and ENJOY!!!

I’ve been excited all day to post because I ate some really delicious food that I couldn’t wait to share with you all!! If you haven’t already go check out my Week 3 recap I posted earlier today.

Sleep: The whole sleeping-like-a-rock sleep continued last night. CJ and I stayed up to watch a movie last night and went to bed probably around 11:30ish. I woke up briefly when CJ got up for work but I fell back asleep for another 2 hours after that. I slept 8 1/2 glorious hours!!

This morning for breakfast I threw together a yummy egg scramble that included zucchini, tomatoes, red peppers ,onions and some ham. I’m almost finished with my Lull farm strawberries. I am definitely going to have to go get some more of those they are so yummy!

I was heading out for a bike ride with my sister today and before we left I wasn’t hungry enough for lunch but wanted to fuel before we left. So I had a white peach (wasn’t really ripe enough yet it was still a little hard) and some pecan and walnuts. I  am LOVING pecans lately!

My sister and I headed over to the rail trail for a nice bike ride because it was beautiful out today! We rode exactly 12 miles in just about an hour!!

Power cleans:

We were given 20 minutes to work our power cleans. We could either use it as a skill or try and PR. I did a little of both. I worked a little with some light weight and when I felt good I went for my PR and got it! I PRd by 10lbs to make my 1RM 125#!!!

I was pretty pumped about this dinner! I love curry and have only really made it once before. This one came out AMAZING!! All it needed was a little bit of heat and it would have been perfect!

I had a side of broccoli that I did overcook a little but it was still good. This really was so good so keep an eye out for the recipe being posted!!!

*I am really trying hard to keep up my water intake today I had about 4 water bottles. Not bad but could still use some more.

Week 3 Recap

I can’t believe that I am already writing my week 3 recap! Not to much has changed this week I am still feeling amazing.

I am working out a lot more recently, I’m trying to run a lot more along with hitting WODs 5-6 days a week so my body is hungry and tired lol

Food:

My favorite part of this month has 100% been trying new food and really trying to branch out with my cooking. It’s really easy before when I didn’t feel like cooking it was easy to just say “lets order a pizza” Now I have to force myself to come up with something delicious and creative.

Life:

Last week was the first time I was put in a social situation that made my diet really tough. But I’m glad I got to go through that while I’m on this whole30 because it reminded me that just because I am at a restaurant or at a BBQ I don’t have to eat like crap. A friend of ours Italian restaurant opened last week and we went to the soft opening. I skipped the bread on the table and ordered my food minus the pasta. It was delicious and I didn’t miss out on anything.

Then on Saturday was my nephew’s bday part and we had a family cook out. I knew this would be a little tough for me but doable. Not drinking alcohol wasn’t really tough for me I think that is one of the things I’m missing the least. The hard part was being hungry and sitting on the table was loads of chips and dips. But I knew that we had good food being cooked on the grill that my body would enjoy much better.

I know how some people really struggle with eating healthy in social environments especially  when the people in the social situation are unsupportive. I am lucky enough to have family and friends that love me and support what ever I chose to do with my body. Why is it that when you go out to eat and everyone at the table orders pasta, and fried this and fried that and the person that chooses healthy and orders a salad is the one that gets the grief?? You need to dig deep and think about what is more important, this one social setting or what you have worked so hard for. Camille Leblanc talks all the time about how she had to stop going out with friends while she trained for the games competitions because her hard work was more important than that few hours out with friends.

Body:

Ok Men…just move on past this part I gotta chat with the ladies for a second.

Alright ladies… I knew that doing a challenge for 30 days would mean that a certain “special week” would fall smack dap in the middle of my challenge, and Hello week 3!  I wasn’t worried about getting cravings or anything like that I was interested to see if my diet would change my symptoms. Now…as long as I’ve been getting my period I am like clock work, I bloat and break out the week before, I get a headache the night before, and backaches like you wouldn’t believe for the first 3 days. So this month I had very little break outs, which I was so happy about, no headache, and the backaches have yet to kick in yet but I’ll let ya know! This is something I can get use to! This just proves that what we eat really does effect our whole body. I am not nearly as bloated, I don’t feel like my jeans are going to bust and I am way more comfortable.

Other than that I will say that my pants are definitely fitting looser, I had to dry all my work out pants this week so they wouldn’t fall down while I was working out. Gotta love that  and I’m starting to see more and more definition on my body! I love it!!

I really can’t believe how fast this month is going by and I am so happy with how I feel and look!

Happy Tuesday Everyone!!!

If you didn’t notice we have a nice fresh theme going on! I wanted something lighter and cleaner. I think this one is better. What do you think?

Sleep: I slept like a rock last night!! I slept about 8 hours and then took some time to relax and read in bed before getting up for the day. It was fantastic!

I made sure to drink water when I first woke up again. I always wake up really dry so I love a cold glass of water the minute I get up.

Before heading out to Crossfit for the night I had an apple with some almond butter. There is really no better snack then this. It keeps me full of energy through my whole work out and coaching.

Today was a great day for a WOD! I got to work out with some great people which makes it even better!! We also had a new face in the box tonight which I LOVE! Welcome Chelsea!!

Oh Man! OH MAN PEOPLE!!  For dinner we had a delicious turkey burger..wrapped in bacon! Yeah Buddy!!!All I did to the burger before I wrapped it was add some 21 seasoning salute to the meat and a little salt and pepper. I also roasted some cauliflower in TJ’s 21 seasoning salute and had a yummy farm tomato on the side.

This was the first meal I’ve made my mom since starting my Whole30 and she couldn’t stop yumming after each bite!

Wow! Ten Days left!! I can’t even believe it!!

Sleep: I slept amazing last night. I went to bed around 10:30 and read till about 12 and slept soundly till 7:30. It was great Smile 

I made sure to really keep an eye on my water intake today. First thing I did when I woke up was drink a bottle of water and made sure to continue it through out the day.

That right there would be a chicken sausage, some steamed cauliflower, two runny eggs and tomatoes. Some fresh strawberries and a cup of tea!

My creativity in the kitchen was really lacking today. It was one of those, “open the fridge door 14 times hoping something new will pop out” kind of days…. So after staring into the fridge for 20 minutes I went with left over Chicken fajitas, broccoli and 1/2 an avocado. It was just ok. Not my favorite meal

My sister and I headed out for our run this afternoon and covered a down and back loop in our neighborhood that is right under 3 miles. It was a great run, my legs felt strong and fast.

My cooking funk continued into dinner. I had zero idea what I wanted to make for dinner. I ended up making some grilled chicken, and boiled cabbage and cauliflower. It was alright nothing to rave about.

I just love Sunday’s! I always have. There is just something about being able to sleep in, wake up to a nice breakfast and just relax and not have to rush off any where. Makes me happy Smile

Sleep: I am back to sleeping soundly again. My allergies are acting up so my eyes felt exhausted all day.

Alright I know this one didn’t come out as pretty as the first one. It kept breaking apart. But I think I figured out the problem, you have to have a LARGE banana. This morning’s tasted way too eggy which means that there wasn’t enough banana. I had two slices of bacon and of course a tea on the side! I am really starting to love tea so much and I want to drive an find some new flavors.

I haven’t had a sweet potato since the first week I started this so that one right there was t-a-s-t-e-y! I really really enjoyed it. The steak was left out of the marinade for me and I used a sugar free steak rub on it. With some broccoli on the side.

**I definitely did not drink enough water today. Now that I am not sitting at a desk all day I really have to be more conscious about my water intake. I have to start refilling my CF603 bottles again.

**My hunger doesn’t seem to be as ravenous any more. I’m starving when I wake up but by lunch I really don’t have an appetite.
